NEW ENGLAND TRUFFLE SHRIMP ROLLS

INGREDIENTS
SERVES: 6
1 lb cooked jumbo shrimp, peeled and cut coarsely
1 cup mayonnaise
1 tbsp Dijon mustard
¼ cup finely diced shallots
¼ cup finely diced celery
1 tsp salt
½ tsp black pepper
2 oz sweet butter, soften
6 potato hot dog buns
1 head of bib lettuce
½ cup chopped Italian parsley
Sea salt (or truffle sea salt)
Black pepper
2 tbps olive oil
Sliced Sabatino Black Winter Truffle
DIRECTIONS
1. Mix together prepared shrimp, mayonnaise, dijon mustard, shallots, celery, parsley, salt and pepper.
2. Lightly spread a layer of butter onto rolls, grill until golden brown.
3. To assemble sandwich; place a bed of lettuce on toasted buns with prepared shrimp salad.
4.Top with Sabatino’s sliced Black Truffle
