PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".
FRESH BLACK WINTER TRUFFLES

Good morning truffle fans,
First of all, we would like to wish you all a Happy New Year and thank you for your continued support as loyal customers!
This week we have a limited quantity of fresh Black Winter Truffles (tuber melanosporum) available to start the week. However, we will have plenty available following our Wednesday delivery.
We are now in the heart of the best season for black winter truffles and the quality in this current batch reflects that. This latest batch features truffles that are absolutely exquisite. They feature beautiful marbling and deep, dark flesh. The aromas are also very intense and earthy. Prices are lower this week and we will be offering 2 tiers: whole and cuts.
Also, we have officially ended the season for Fresh White Truffles. This year was one of the most challenging harvests for white truffles, but we are proud to have been able to get you all consistent supply.

Profile: Skin has a black, rocky outer layer. Flesh ranges from beige To Dark Brown in color.
Aroma: Rich notes of hazelnuts, Cacao Beans, and earth.
