PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Welcome back truffle lovers,

With the 4th of July behind us, we are looking forward to entering the heart of the Australian Black Winter Truffle season. This week we are continuing to receive larger quantities of fresh Black Winter Truffles as the season progresses in Australia. Our producers are optimistic about the season based on early season quantities. The quality of these truffles only continue to improve as the truffles we are seeing these week have deeper, more fragrant aromas and excellent marbling. Prices remain steady this week as more volume is available.  

In addition to the Black Winter truffles from Australia, our fresh European Black Summer Truffles continue to improve in quality and availability. The quality has been fantastic this season as you already know with bright, cream-colored marbling and delicate, woodsy aromatics. Prices remain stable this week.
