PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

FRESH BURGUNDY TRUFFLES
Good morning everyone,
Fresh White Truffle season is entering its peak. While we are still facing some challenges in importing enough quantities, this week's batch is the best yet of the season.We are rolling out 3-tier pricing this week, which segments our White Truffles into Small (10 - 19 grams), Medium (20 - 59g), and Large (over 60g) tiers. See some of the beauty shots from each size tier below. We have also attached a comprehensive chart outlining our new truffle sizing.
The Fresh Burgundy truffles (tuber uncinatum) season is winding down, so this will be the last week with availability of Burgundy truffles. Prices are steady this week.
Another bright note is that we are officially starting the fresh Black Winter Truffles (tuber melanosporum) season this week! This is a tad bit early, but we decided to start importing Black Winter Truffles after testing their quality. This first batch already has very strong, intense aromas. NOTE: When sliced, this color of the flesh of these truffles will be very light, however, they are considerably more intense than the Burgundy truffles and the prices are very fair.
