PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".
FRESH BLACK WINTER TRUFFLES
Good morning everyone,
This week we have decent quantities of Black Winter Truffles (tuber melanosporum) available, but as mentioned last week, the quantities available are decreasing each week. This week the quality of truffles remains outstanding. This week's batch is still in top form with nicely formed truffles featuring rich and earthy aromas and flavor.
With the end of the season approaching, we can almost guarantee we will be able to continue offering truffles through the end of March. If we are lucky, possibly into early April.
Prices are steady this week and we will be offering 2 tiers: whole and cuts.
