PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning truffle lovers,
This week our batch of Black Winter Truffles (tuber melanosporum) is plentiful and loaded with truffles that are just about perfect in every way. The marbling is beautiful and just about as dark as it gets. The aromas are also very deep and rich. We will be offering 2 tiers this week: whole and cut tiers. Black Winter truffle prices have risen slightly this week.
Availability of Fresh White Truffles this week is extremely limited and we will be selling on a first come, first served basis. We expect to be sold out very shortly this week and expect the same for next week.
REMINDER: For the Christmas and New Year's holidays, we advise you to place your orders by the following respective deadline dates, Wed 22 and Wed 29 by 1PM EST. Beyond those 2 shipping deadline dates we WILL NOT be responsible if packages are not delivered on time.
