PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning truffle fans,


This week we have plenty of great quality Black Winter Truffles (tuber melanosporum) available. Our latest batch is loaded with truffles that are in perfect condition. They feature beautiful marbling and deep, dark flesh. This is nearing the best quality of the season. The aromas are also very deep and rich. Prices are steady this week and we will be offering 2 tiers this week: whole and cuts. 

Prices have risen for Fresh White Truffles this week, but the quality remains very good for this time of the year. This will be the last week we offer fresh white truffles. We will have small, medium and large tiers available this week. 

REMINDER: For the New Year's holiday, we advise you to place your orders by Wed 29 by 1PM EST at the latest. Beyond that shipping deadline we WILL NOT be responsible if packages are not delivered on time.

Aroma: Rich notes of hazelnuts, Cacao Beans, and earth.
