White Truffle Sauce Pizza with Prosciutto and Arugula

CHEF'S NOTES: While a pizza oven is optimal for restaurant-style pizza, a hot grill, oven with a pizza stone, or baking sheet at over 450°F yield excellent results. Maintain high temperatures and limit opening the oven to preserve heat.
¼ cup flour
4 tbsp olive oil
½ cup Sabatino White Truffle Sauce
½ cup grated pecorino cheese
10 thin slices prosciutto
Cut pizza dough in half and form into two balls, place in a deep baking dish or bowl and cover with a damp towel. Place in a warm area of the kitchen for 1 hour.
Preheat oven or grill with a pizza stone to 475F.
On a lightly floured work surface, gently stretch one ball of dough into a circle 12 inches wide. Place on a pizza peel or baking sheet.
Drizzle dough with 2 tbsp olive oil then spread ¼ cup White truffle sauce in a circle on the dough, leaving room for the crust to form. Sprinkle with ¼ of pecorino and transfer to the oven or grill. Cook for 5-8 minutes, oven times will vary.
When pizza is dark and crusty on the edges and dough has puffed and cooked through, remove from oven. Drape prosciutto slices over pizza and top with arugula. Cut, serve and repeat with second pizza.
