PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

FRESH BLACK WINTER TRUFFLES
Good morning truffle fans,
We have officially ended the Burgundy truffle (tuber uncinatum) season as we have received our first batch of Black Winter Truffles (tuber melanosporum). The first batch of Black Winter truffles is noticeably more fragrant and flavorful than the Burgundy truffles.
The Black Winter truffles cut noticeably lighter than they typically will later in the season, however, as mentioned before, the flavors and aromas are much more intense in these. We feel confident our customers will find the quality of these truffles to exceed their needs.
This week we have a good amount of White Truffles (tuber magnatum pico) available. The latest batch is showing exceptionally good quality with more intense flavors and aromas. Availability will be somewhat limited so we recommend placing your orders early to ensure availability as demand remains very strong.Please email or call us for a fast quote.
