PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning everyone,
This week we have a very bountiful batch of Black Summer Truffles (tuber aestivum) that have just arrived. The quality of this latest shipment shows increasing quality with nice, earthy aromas and shapely round truffles. Prices are steady this week.
These Black Summer truffles are very nice introductions to fresh truffles with their lighter, more delicate flavors and aromas and lower prices.
We will be offering two tiers this week of these Black Summer truffles: whole truffles and cuts.
