PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning everyone,
We are entering the peak of quality this week for Australian Black Winter Truffles (tuber melanosporum). We are seeing some amazing attributes in this latest batch with beautiful pitch black marbling and beautifully formed pieces! We will have good availability this week as well in 2 tiers: cuts and whole truffles. Prices are steady this week.
Additionally, our Black Summer Truffles (tuber aestivum) are nearing their peak for the season as well with plenty of availability and loads of strong, earthy aromas. We will be offering both whole and cuts tiers this week as well. Prices are steady this week.
