PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning truffle fans,
We just received very large batches of Black Winter Truffles (tuber melanosporum) and White Truffles (tuber magnatum pico) this week. Each batch has loads of very high quality truffles. On the Black Winter truffles, the aromas are loaded with rich notes of espresso, cocoa, and fresh earth. The flavors are also very deep and rich. The flesh continues to darken and is showing more detailed marbling. Prices this week for Black Winter truffles are slightly up.
This week's White Truffles are showing excellent quality. This batch features very intense aromas and flavors. The truffles are also very nicely formed with plenty of nice-sized, well rounded pieces. Due to continued high demand, we recommend placing your orders early to ensure availability.
