PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning truffle fans,
We are very excited for this week's batch of Black Winter Truffles (tuber melanosporum). This latest batch is showing very nice quality. The flesh continues to darken while the flavor continues to become richer and more robust with notes of cocoa and earthy aromas.
Due to the upcoming Thanksgiving holiday, there is a very short shipping window this week. To ensure you receive your fresh truffle orders this week, we urge to place all orders by Tuesday, November 22 at 1PM ET to ensure your orders ship and are delivered before the Thanksgiving holiday.
This week our latest batch of White Truffles (tuber magnatum pico) is also showing very nice quality. We are nearing peak season in terms of quality with more intense flavors and aromas. Availability continues to be limited so we recommend placing your orders early to ensure availability as demand remains very strong.
