PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning everyone,
This week we have another large batch of Black Summer Truffles (tuber aestivum) that have just arrived this morning. The quality continues to improve each week with more pronounced, earthy aromas and larger, well-formed round truffles. Prices are steady this week.
Black Summer truffles offer a good entry point to fresh truffles with their lighter, more delicate flavors and aromas and lower prices.
We will be offering two tiers this week of our Black Summer truffles: whole truffles and cuts.
